Scallops in the workplace??

I worked in an office that had full kitchen facilities – and so we would make use of this regularly. One afternoon I brought in some red peppers, spinach, mushrooms and rustled up some scallops.

Prep Time: 10mins
Cooking Time: 10 mins
Serves: 1

  • 5 or 6 Scallops
  • A handful of Spinach
  • Half a Red Pepper
  • Basil

Here’s the recipe:

  1. Grab a frying pan
  2. Chop the red pepper and fry in olive oil
  3. Add the mushrooms
  4. Add the spinach
  5. Move the veg to one side of the pan and drain out any extra liquid
  6. Fry the scallops in olive oil (you can use butter if you wish)
  7. Season to taste
  8. Remove from heat and plate up
