Scallops in the workplace??
I worked in an office that had full kitchen facilities – and so we would make use of this regularly. One afternoon I brought in some red peppers, spinach, mushrooms and rustled up some scallops.

Serves: 1
- 5 or 6 Scallops
- A handful of Spinach
- Half a Red Pepper
- Basil
Here’s the recipe:
- Grab a frying pan
- Chop the red pepper and fry in olive oil
- Add the mushrooms
- Add the spinach
- Move the veg to one side of the pan and drain out any extra liquid
- Fry the scallops in olive oil (you can use butter if you wish)
- Season to taste
- Remove from heat and plate up
