Lamb Shank with chilli & tomato

A friend came over for dinner one time, suffering with a blocked nose, sinus pain and just generally looking awful. This dish fixed her right up and she left a few hours later able to breathe and in a lot less discomfort. 

A little pricey but Lamb cooked just right is truly a God-send!

Prep time: 25 minutes

Cook Time: 1hr 30 minutes

Serves: as per lamb shank

 

  • Lamb  Shank – 1 per person
  • Chopped tomatoes – 400ml
  • Sweet potato – 1 large per person
  • Chilli – 10g
  • Basil – 1 handful
  • Vine Cherry tomatoes – enough for 4-6 per person
  • Olive oil – 15mls
  • Herbs de Provence (HdP)- 10g

Method

  1. Preheat the oven to 180
  2. Wrap the shanks in foil, drizzle with olive oil and a good sprinkling of chilli then pop into the oven for 45 minutes
  3. Blend the chopped tomatoes, garlic and the remainder of the chilli in a blender.
  4. Cut the vine tomatoes into sections of 4 or 6
  5. Peel the sweet potato ready for later
  6. Bring the tomato sauce mixture to a simmer in a pan – try not to let it burn!!
  7. Take the shanks from the oven, unwrap them and place into the tomato mixture – pop a lid on and leave for 30mins – 1hr, stirring occasionally
  8. Roughly chop the sweet potato and pop into a bowl/container – drizzle some olive oil over and throw in some HdP and shake gently, ensuring the potato is coated
  9. Using baking paper or foil, line a tray and pop the potatoes in the oven for around 15 -20 minutes until slightly crisp
  10. Grab a frying pan and use a touch of oil on the vine tomatoes to crisp the bottoms, then pop them on the potato tray for 5 minutes until the skins are just starting to ‘raisin’
  11. When serving up – add a couple leaves of basil to give a contrasting colour to the red/orange bowl of goodness

Tips

When cooking lamb shanks – I’ve found the longer time I have to cook them the better. Christmas 2016 I spent 4 hours cooking lamb shanks then let them cool and then recooked them again the day after. The meat fell off the bone and was so soft…
