Salmon with stuffed pepper

I love roasted peppers as they are incredibly easy to make and you can customise them to your own taste by adding whatever spices, vegetables, rice, quinoa and colours you happen to enjoy – go crazy!

Prep time: 15 minutes

Cook Time: 30 minutes

Serves: 1 

Salmon with mixed peppers quinoa stuffed yellow pepper

  • Salmon – 1 fillet
  • Quinoa – 40g
  • Green Pepper – 1/2 diced
  • Red Pepper – 1/2 diced
  • Spring Onions – 2 stalks
  • Red Onion – 1/2 chopped
  • Herbs de Provence – 5g
  • Cucumber – 🥒 1/4
  • Olive oil – 20mls
 

The Method

  1. Boil the quinoa in 200ml of water after rinsing thoroughly in cold water to remove the bitterness.
  2. Preheat oven to 180
  3. Finely dice the pepper, onion and spring onion
  4. Lightly fry the onion in olive oil, then add the peppers
  5. Once quinoa is cooked (around 10 minutes), spoon out into a large bowl and allow to cool for 5 minutes
  6. Throw it into the bowl along with the onion, peppers and herbs.
  7. Chop a pepper in half and remove all seeds, 
  8. Stuff peppers with quinoa mix and pop on a oiled baking tray in the centre of the oven for 20-25 minutes (or when the peppers look done)
