I love egg-fried rice. You can mix it up and really make it your own style…here’s one of mine..
Prep Time: 10 mins
Cooking Time: 15mins
Serves: 2
- Olive oil – 20ml
- Rice
– 2 cups?
- Spring onions – 2 stalks
- Bacon – 3 rashers
- Mushroom – 4
- Egg – 2
- Carrot – 1/2
- Cucumber – 1/2
- Sesame seeds – 5g
How to
- Cook the rice (I cheat and use a rice cooker… perfect every time)
- Heat oil in the pan and fry peppers
- Add Chilli
- Add chopped bacon
- Add sliced mushrooms
- Add some of the spring onions
- Add cooked rice
- Mix for a while
- Add egg and mix in
- Salt and pepper to taste
- Don’t overcook – take off heat and serve
Tips
I have seen egg fried rice made in so many different ways, I like mine soft and the egg still slightly gooey when it’s done.
The other method is to cook the egg as a very thin omelette and then chop it into the rice and other vegetables.
