Egg fried rice

I love egg-fried rice. You can mix it up and really make it your own style…here’s one of mine..

Prep Time: 10 mins
Cooking Time: 15mins 
Serves: 2 

  • Olive oil – 20ml
  • Rice 🍚 – 2 cups?
  • Spring onions – 2 stalks
  • Bacon – 3 rashers
  • Mushroom – 4 
  •  Egg – 2
  • Carrot – 1/2
  • Cucumber – 1/2
  • Sesame seeds – 5g

How to

  1. Cook the rice (I cheat and use a rice cooker… perfect every time)
  2. Heat oil in the pan and fry peppers
  3. Add Chilli
  4. Add chopped bacon
  5. Add sliced mushrooms
  6. Add some of the spring onions
  7. Add cooked rice
  8. Mix for a while
  9. Add egg and mix in
  10. Salt and pepper to taste
  11. Don’t overcook – take off heat and serve 

Tips

I have seen egg fried rice made in so many different ways, I like mine soft and the egg still slightly gooey when it’s done.

The other method is to cook the egg as a very thin omelette and then chop it into the rice and other vegetables.

You can use offcuts of chicken, bits of pork, prawns🦐  – anything you wish to throw in…
