So… I’ve never made fishcakes before and so this was purely made up as I went along. Quite often my cooking is experimental and there have been one or two times I end up not posting a meal because it doesn’t end up the way I want it to.
However this meal, although didn’t look the way I had anticipated, still tasted amazing and so I wish to share it with you.
I finish the recipe with thoughts as to how I would better the dish next time, please feel free to comment any other suggestions.

Cooking Time: Roughly 1hr
Makes: 9 fishcakes
- Whitefish – 2 whole fillets
- Potato – 4 large
- Fresh Mozzarella – 1 (150g)
- Parsley – 1 handful
- Chilli – 20g
- Garlic oil – a good drizzle
- Butter – 10/15g
- Oatcakes – 10 blitzed
Method
- Lightly fry Whitefish with chilli in olive oil
- Boil potatoes until Mashable
- Mash potatoes with butter and seasoning
- Break fish into smaller pieces and fold into the mash
- Mozzarella cubes in garlic oil and chilli for centres of cakes
- Roughly chop parsley and add to the mix
- Fold into mash
- Mozzarella mix into mash
- Cover top with mash
- Oatcakes blitzed into crumbs
- Coat cakes evenly with crumbs
- Drizzle with oil and shallow or deep fry

I feel that these could have been made better by shallow frying or deep frying rather than baking in the oven.
Next time I would use use egg to coat the fishcake before dipping in the breadcrumbs/and then shallow fry or deep fry.
