Fishcake…pie… mistake

So… I’ve never made fishcakes before and so this was purely made up as I went along. Quite often my cooking is experimental and there have been one or two times I end up not posting a meal because it doesn’t end up the way I want it to.

However this meal, although didn’t look the way I had anticipated, still tasted amazing and so I wish to share it with you.

I finish the recipe with thoughts as to how I would better the dish next time, please feel free to comment any other suggestions.

Prep Time:30mins
Cooking Time: Roughly 1hr
Makes: 9 fishcakes

  • Whitefish – 2 whole fillets
  • Potato – 4 large
  • Fresh Mozzarella – 1 (150g)
  • Parsley – 1 handful
  • Chilli – 20g
  • Garlic oil – a good drizzle
  • Butter – 10/15g
  • Oatcakes – 10 blitzed

Method

  1. Lightly fry Whitefish with chilli in olive oil
  2. Boil potatoes until Mashable
  3. Mash potatoes with butter and seasoning
  4. Break fish into smaller pieces and fold into the mash
  5. Mozzarella cubes in garlic oil and chilli for centres of cakes
  6. Roughly chop parsley and add to the mix
  7. Fold into mash
  8. Mozzarella mix into mash
  9. Cover top with mash
  10. Oatcakes blitzed into crumbs
  11. Coat cakes evenly with crumbs
  12. Drizzle with oil and shallow or deep fry

More info

I feel that these could have been made better by shallow frying or deep frying rather than baking in the oven.

Next time I would use use egg to coat the fishcake before dipping in the breadcrumbs/and then shallow fry or deep fry.
