I felt like cooking something using beef, but didn’t just want a steak. I thought it could be an idea to use the ingredients you may see with a steak but in a different format.
Lightly fried beef with chilli, mushroom and onion with a potato salad. At the time of making this, Sugar-free September is underway – I realised that mayonnaise has added sugar in it and so used greek yoghurt as the base in the potato salad. It gave it a slightly fresher flavour but feel free to use mayonnaise in your version.
Prep Time: 15 minutes
Cooking Time: 20 minutes
Serves: 2 (+ Potato salad for days)
- New potatoes – 10
- Carrot – 1
- Cucumber – 1/2
- Eggs – 2 or 3
- Mushroom – 5
- Greek Yoghurt – 1 pot
- Red onion – 1
- Parsley – a bunch
- Chilli – 2 or 3
- Spring onion – 3 stalks
- Frying Beef – 2
- Basil – garnish
- Salt & Pepper
- Olive oil
Method
- Chop all the veg (carrots, potatoes, cucumber, mushrooms, red onion, spring onion)
- Boil potatoes and carrots
- Cut beef into strips and soak in olive oil with chopped chilli and half of the red onion, salt & pepper and third of the spring onions – leave to marinate
- Boil eggs
- Drain off potatoes and carrots once boiled
- Add yoghurt and partially mash (don’t mash fully – we want chunks left)
- Add egg, the rest of the red onion and spring onions then the cucumber and the chopped parsley
- Fry mushrooms in olive oil then move to one side in pan
- Lightly fry the marinated beef mix in the pan
- Mix in with mushrooms and then serve

There are many different way to make potato salad and many different ingredients that can be used. One of my favourite has contained slices of apple! 🍏
I’m thinking next time to try one of the following:

– Chorizo
– Sweet potato
– Beetroot
– Macaroni pasta
– Mozzarella
