Goats cheese & beetroot salad
Nelson’s Journey is a Norfolk charity that supports children and young people up to their 18th birthday who have experienced the death of a significant person in their life. They provide a range of support, appropriate for the needs of each child or young person. This may include one-to-one support and opportunities to meet others their age who have also experienced a bereavement.
We take part annually in a Purple Picnic where we bring food that contains something purple and we try to wear something purple too and donate money as a company.

Salad
- Rocket – 1 bag
- Goats Cheese – 1 roll
- Sweet potato – 1 potato
- Beetroot – 4 whole
- Dice sweet potato and toss in olive oil with some smoked paprika
- Bake in the oven at 180 for 10 minutes
- Chop the beetroot into small pieces
- Slice up the goats cheese
- Throw all ingredients together
- Drizzle some Balsamic glaze over the salad to taste.
