I recently had the privilege of visiting Dubai for a few days during my trip to Japan. I usually fly KLM through Amsterdam but this time I wanted to go outside of my comfort zone.
I love roasted peppers as they are incredibly easy to make and you can customise them to your own taste by adding whatever spices, vegetables, rice, quinoa and colours you happen to enjoy – go crazy!
I love egg-fried rice. You can mix it up and really make it your own style…here’s one of mine.

Ratatouille originates from southern France and is a rustic stew created by simmering the ingredients for hours until tender. In this recipe I decided to “deconstruct” the dish by piling the veggies on rice.
I’d cooked a leg of Turkey the day before and so this was a meal made from scraps in my fridge. I can’t remember the exact method I used but feel free to read.
